Easy Tropical Pancakes, V & GF
These vegan, gluten-free pancakes are easier to make from scratch than any conventional pancakes. The best part is that they don’t require any type of milk. I recently realized that baking with water instead of milk does not make a difference. Save money & time from buying plant milk or making your own by simply adding filtered water instead.
Ingredients
- 1 cup Oats or oat flour
- 1/2 tsp Baking soda (aluminum-free)
- 1 very ripe Banana
- 1/2 cup Filtered Water
Optional
- 1 tsp Vanilla (alcohol-free)
- 1 tbsp Cinnamon
- Tropical fruit for topping
Instructions

If you are using oats rather than oat flour, process oats in blender or grinder. Mix with baking soda.

Mash banana and mix with remainder of ingredients.

Heat cast iron pan on medium & use ladle to pour small, round pancakes.

Try to keep them no larger than the width of your spatula so you can easily flip them. Take your time with this. Wait for bubbles to fully form & flip only once you've scraped under with spatula.

Makes about 8, enjoy!
If you don’t have oat flour or a high speed blender to process oats into flour, just throw them into a clean coffee grinder.
Three seconds later you have oat flour!
Though I prefer to eat my fruits uncooked, mashed bananas are my favorite egg replacer in baking.
