Raw Granola

 

Before making the switch to cleaner eating habits, I loooooooved my homemade granola, baked in coconut oil and maple syrup, until perfectly crisp. Don’t get me wrong, regular homemade granola is not particularly unhealthy, but if your goal is to get the most nutrients out of your food, this raw take on granola is a far better option.

If you have a blender with a pulse option or a food processor, this will take you less than 3 minutes to prepare in the morning. If you don’t have either of these, you can easily chop up all the ingredients and then mix together.

If you can’t find fresh dates like the box in the image below, you can soak your dates and pat them dry before chopping or processing them.

The base of this recipe is so simple and can be done using only two ingredients: coconut shavings and dates. Alternatively, you can use oats instead of coconut shavings, but I have a thing against oats that I will get into in another post.

Here are my ingredients of choice for my own rawnola.

You may modify it as you like, by either adding more seeds and nuts or flavors like almond extract, cinnamon, or cocoa powder.

Ingredients

  • 1 cup Coconut shavings
  • 4 Dates (fresh and pitted or soaked for dried)
  • 1/4 cup Nuts or seeds (I like walnuts and pumpkin seeds)

Optional Additions

  • 1 tsp Vanilla (alcohol free)
  • 1 tbsp Cocao Nibs

Instructions

  1. Pulse in the food processor until slightly chunky.

  2. Eat up!

On a typical morning, I like to eat this rawnola over a bowl of fruit with almond milk or a smoothie, but on fancy mornings, I like to indulge by throwing it over my plant-based Cinnamon Roll French Toast and Nice-cream.
