Raw Vegan Tacos
If you’re adventuring into raw vegan territory, these tacos are a must try! They are great to make on the road and take no time to prep. By far my favorite snack/meal before getting active as they keep you feeling light but full.
Raw Vegan Sprouted Bean Tacos
Ingredients
- 1 cup Fresh mixed bean sprouts
- 6 leafs of Collard greens or Swiss chard
- 2 avocados
- 1 clove of Garlic
- 2 large Tomatoes
- 1 small Red onion
- 1 cup Cilantro
- 2 tbsp Lime juice
- 1 tsp Himalayan Salt & Pepper
Instructions

Chop red onion, tomato, and half the cilantro. Mix together and add 1 tbsp of lime juice and salt and pepper.

Mash avocados and garlic with 1 tbsp of lime juice (I use a food processor to speed things up - get it!?). Add cilantro and salt and pepper.

Remove stems from collard greens. Use a bowl to flip over and cut out circle shapes.

Layer up pico de gallo, guacamole, and sprouts over collard greens taco shells. Serve and enjoy!
