Mint Chocolate Chip Tarts

Mint Chocolate Chip Tarts

Ingredients

Crust

  • 2 cups Raw Walnuts
  • 1 cup Fresh Dates (pitted and soaked if dry)
  • 3 Tbsp Cacao Powder
  • 1 tsp Vanilla
  • 1 tsp Himalayan Salt

Filling

  • 2 cups Raw Cashews (soaked)
  • 1 Avocado
  • 1/2 cup Filtered Water (or water kept from soaking dates)
  • 4 Tbsp Maple Syrup
  • 1/4 cup Fresh Mint Leaves
  • 1 drop Peppermint
  • 1/2 tsp Spirulina Powder
  • 1/4 cup Dairy-Free Chocolate Chips

Chocolate Drizzle

  • 1/2 cup Dairy-Free Chocolate Chips

Instructions

  1. For the crust, using a food processor process walnuts until they become a powder will small chunks. Add the dates, cacao powder, vanilla, and salt and process until a dough like ball forms. Press into tart molds and set in freezer.

  2. For the filling, using a food processor or blender, process the cashews with the maple syrup and water until smooth. Add the avocados, mint, peppermint, and spirulina and continue to process until completely smooth. Chop small chunks of chocolate chips and stir into filling that has been removed from food processor. Pour over tart crusts and return to freezer for 30-60 minutes.

  3. Melt chocolate chips in a bowl placed over a larger bowl of boiling water. Place melted chocolate in a thin-tipped piping bag to drizzle over tarts and serve! Keep refrigerated until serving.
