Pesto Zoodles

Pesto pasta used to be my go-to meal when I was lazy or in a rush. I never imagined that a healthier, cleaner alternative could be easier to make in half the time. This deliciously healthy meal is ready in under 10 minutes! It is a great pre-workout meal and high in Vitamin C, A, potassium and iron.

Pesto Zucchini Noodles

Ingredients

  • 2 medium Organic Zucchinis
  • 1 Avocado
  • a Handful of Raw walnuts (or any nut)
  • 1/2 cup Organic Kale
  • 1/2 cup Basil
  • 1 clove of Garlic
  • 2 tbsp Lemon juice

Instructions

  1. Spiralize your zucchini. 

  2. Place the remaining ingredients in food processor or blender and pulse until a pesto texture forms.

  3. Serve and enjoy!

Recipe Notes
