Vegan & Gluten-Free Waffles

It’s so easy today to purchase any premade gluten-free waffle mix and ‘veganize’ it by substituting the eggs for flax or chia eggs, for instance. But if you are trying to avoid processed foods, the following recipe calls for only whole ingredients for the flour base: ground oats and almonds. The use of ripe bananas instead of flax or chia seeds gives it a naturally sweet taste and the aquafaba gives it that extra fluffiness. primitivish

Here’s how it’s made:

Vegan & Gluten-Free Waffles

Ingredients

  • 2 1/2 cups Oats (Gluten-Free)
  • 1/2 cup Almond meal
  • 1 tsp Baking Soda (Aluminum-Free)
  • 1 Tbsp Tapioca or Corn Starch (Organic)
  • 2 ripe Bananas
  • 1 cup Filtered water
  • 1 tsp Apple Cider Vinegar
  • 1/4 cup Aquafaba*
  • 1 Tbsp Vanilla

Instructions

  1. Grind oats in blender for coffee grinder.

  2. Mix all dry ingredients.

  3. Mash banana (preferably using blender to avoid clumps).

  4. Stir bananas, water, apple cider vinegar, aquafaba, vanilla in with dry ingredients.

  5. Pour batter into waffle maker according to brand instructions. Serve with toppings of your choice!
