Raw Vegan Sprouted Bean Tacos

Ingredients

  • 1 cup Fresh mixed bean sprouts
  • 6 leafs of Collard greens or Swiss chard
  • 2 avocados
  • 1 clove of Garlic
  • 2 large Tomatoes
  • 1 small Red onion
  • 1 cup Cilantro
  • 2 tbsp Lime juice
  • 1 tsp Himalayan Salt & Pepper

Instructions

  1. Chop red onion, tomato, and half the cilantro. Mix together and add 1 tbsp of lime juice and salt and pepper. 

  2. Mash avocados and garlic with 1 tbsp of lime juice (I use a food processor to speed things up - get it!?). Add cilantro and salt and pepper. 

  3. Remove stems from collard greens. Use a bowl to flip over and cut out circle shapes.

  4. Layer up pico de gallo, guacamole, and sprouts over collard greens taco shells. Serve and enjoy!
