If your dates are not soft and fresh, soak in warm water for 5 minutes. Strain and dry.
In a food processor or blender, chop cashews until ground to a powder.
Add coconut oil, dates, and vanilla. Blend until fully mixed and paste forms.
Add salt and add 2 tbsp of the hemp hearts and continue to blend until fully mixed.
You should be able to form balls with the mixture. If it is too sticky, place in the fridge for 20 minutes.
Form tablespoon-sized balls and coat with the remainder of the hemp hearts.
Place in freezer for 30 minutes and keep in fridge between servings. Enjoy!!
