Preheat oven to 375°F
Chop eggplant into cubes and cauliflower into florets and place onto baking sheet. Bake for 15 minutes.
Remove eggplant and let cool. Return cauliflower to oven for 20 minutes.
In a blender or food processor, blend all ingredients for Baba ganoush. Add seasoning to taste.
Remove cauliflower from oven. Place Baba Ganoush over rice with the remainder of ingredients into bowl. Enjoy!
